Some Of Peg's Recipes


Date and Walnut Loaf

1 cup of All Bran
1 cup milk warmed
1 level teaspoon Bi-carb soda
1/2 cup chopped walnuts
1/2 cup chopped dates
1 level tablespoon golden syrup
1 cup flour
1/2 cup brown sugar

Combine All Bran, golden syrup, warm milk together in a bowl and let stand until cooled.  Add remaining ingredients and mix together thoroughly. Pour into a greased loaf tin and bake in a moderate oven for about 40 mins.....serve with a thin layer of butter.


Caramel Date Walnut Slice
1 sultana cake mix packet
150g melted butter
mix together and press into a greased cake tin...
cook in a moderate oven for 15 min 
remove base from oven, press down mixture with the back of  spoon, spread over the base 1 cup of chopped dates, (I cut mine longways) 1/3 cup chopped walnuts....then pour over 1 tin on condensed milk, back into the oven for another 20mins or until golden brown...


Double Choc/Caramel Slice (another version)


1 chocolate cake mix
125g butter (melted)
1/2 coconut
1 tin of Nestle Top'n'Fill Caramel
1 250g block of chocolate

Mix cake mix, coconut and butter together, press into a slice tin which has been line with baking paper.
Cook 180 degree oven for 12 mins....place Nestle Caramel in a microwave dish, heat for 1 min, remove and spread over base, retrurn base to oven and cook for a further 25-30 mins...
Cool ...melt block of chocolate and spread over the slice....yummo...





Moist Chocolate Cake....
so very quick and easy...

In a mixing bowl add
1 cup SR flour
1 cup castor sugar
1/2 full cream milk - cream works well
1 teaspoon vanilla
2 eggs
2 tablespoons coco powder
beat together until combined (use the mix master, it does not take long at all)
once combined add 3 tablespoons of melted butter...
beat for 1 min...the colour will change
Pour into a prepared round 20cm cake tin - the bottom lined with baking paper and the sides have been sprayed with cooking spray...bake in a moderate oven (180) for 40 mins...
when cooked let stand for a couple of minutes and then turn out onto a wire rack...when it is cold
decorate with chocolate icing or whipped cream, strawberries and grated chocolate.....yummo...




Roasted Nuts

Your choice of raw nuts (we used two bags of 175g  Coles Raw Nuts)
I did this bit in a saucepan with a lid
2 tablespoons of rock salt, dissolved in enough water to cover the nuts....replace lid, leave overnight
Drain the nuts well the next morning, in a shallow slice tin place some baking paper, then add the drained nuts....cook in a slow oven, I used 100 degree.... these took about 2.5 hours....turn every now and then, of course do a taste test...when cooked , cool and place in an airtight container....


Caramel Coconut Slice....

1 butter cake mix
140 g melted butter
mix together and spread into a large slice tin, cook for 12 mins in a moderate oven

In a saucepan add 1 tin of condensed milk, 2 tablespoons of golden syrup, 1/4 cup brown sugar, 60g butter...heat until blended thru...
in another bowl add two cups of coconut, 1/3 cup castor sugar, 2 eggs lightly beaten, mix well

remove base from oven....press down with the back of a spoon.....pour over caramel filling....sprinkle over coconut mixture....return to the oven for anther 25 mins until golden brown..

Dream Bars (Peg's Version)

1 sultanta cake mix
125 grams butter
melt butter add to dry cake mix well
press into a slice tin
cook for 10 mins ..180 degree oven
in a bowl mix
1 1/2 cups of coconut
1/2 teaspoon baking powder
1 tablespoon plain flour
1/2 cup brown sugar firmly packed
2 eggs
1 teaspoon vanilla
1 cup of bottled fruit mince
mix well ....spread over base cook for another 25 - 30 mins - until golden and firm
cool...dust with icing sugar
  
Malteser Slice
1 x 180g packet of maltesers
1 x 250g packet of Malt O Milk biscuits
1 tin of condesed milk ( the recipe calls for 1/2 tin but I use the lot)
125g butter
1 x 250g  of Cadbury Chocolate
Crush biscuits
Crush maltesers  mix together
Heat condensed milk and butter in a saucepan on low
Add this to the dry ingredients, mix well
Line a slice tin with baking paper, pour in mixture, press well
Melt chocolate pour over the slice and refrigerate....
Yummo...but very rich....

Mixed Fruit and Walnut Slice With Lemon Icing...

375g mixed fruit
1/2 cup walnuts
2 cups SR flour
175g melted butter
225g brown sugar
2 eggs
1 teaspoon vanilla
1 pinch salt

In a bowl mix the sifted flour, sugar, fruit and nuts ....mix the vanilla with the two eggs, add this and the melted butter to the dry ingredients, press into a 16cm x 26cm tin which has been lined with baking paper...cook in a moderate oven 180 degree for 30 mins....

Lemon Icing..

2 cups icing sugar
40g butter
Lemon Juice

Mix all together, should make a thick icing....when the slice has cooled for 15 minutes spread with icing and sprinkle with shredded coconut.

Enjoy....

 Chewy Choc Rolo Slice

150g unsalted butter chopped
1 x 200g Cadbury Chocolate
1 1/2 cups SR flour
1/2 cup brown sugar well packed
1 x 395g can sweetened condensed milk
1/2 cup desiccated coconut
2 x 50g packets Rolo chocolates
Cocoa powder to decorate

Line a slice tin with baking paper
Combine butter and chocolate in a pan stir over low heat until completely melted, add condensed milk...add to dry ingredients, mix well, place in tin....arrange Rolos over the top and press completely into slice mixture.
Cool 25 minutes in 180 degree oven...do not overcook....cool slice in pan before removing..
Cut into small pieces and dust with sifted cocoa....

Chocolate Fruit Slice with Lemon Icing....

1 cup SR flour
1 teaspoon mixed spice
3/4 cup castor sugar
1 cup mixed fruit
1/2 cup coconut
1/2 cup choc bits
2 eggs lightly beaten
100g butter - melted

Line slice tin with baking paper
Combine sifted dry ingredients, sugar, fruit, coconut and choc bits, mix in eggs and butter
Press evenly into tin and bake in moderate oven for 25 mins
Let stand 10 mins before spreading with icing
Sprinkle with shredded coconut

Lemon Icing

1 1/2 cups of sifted icing sugar
1 tablespoon soft butter
1 tablespoon lemon icing (approx)
Mix together to form a stiff paste
